Nicole Leah "Nicky" Goller

Nicole “Nicky” Leah (Laurencelle) Goller, age 54, passed away peacefully in her home on January 31, 2025, after a courageous five-year battle with Leiomyosarcoma.

She was born on August 10th, 1970, in Plattsburgh, NY and resided for several years in Keeseville, NY, before her family eventually settled in East Berkshire, VT. After high school, Nicky moved to the Burlington area and began working as a medical librarian in the Dana Medical Library, at the University of Vermont and as a medical informaticist from then on. She earned a bachelor’s degree from Woodbury College and a master’s degree in criminal justice administration from Norwich University.

From a young age, Nicole loved fabric, scissors, needles and thread and she grew to be an amazing seamstress and quilter. Among her many accomplishments, she enjoyed her time as an adjunct professor at both UVM and The Community College of Vermont where she taught a medical terminology course. Her life then led her to be the owner and creator of several businesses, beginning with her quilt shop, Sunny Laurel Sisters, in Colchester, VT. In 2017, Nicky met her soulmate and soon to be husband, Jeff. Their first “date” was while she was peddling her wares at a craft fair, from that moment on he was hooked. After a whirlwind romance, Nicole and Jeff were married one year from that day in 2018. After returning home from their beautiful honeymoon in Rome and Barcelona, they decided to open Easy as Cake, a bakery and restaurant near their home in Colchester. In 2022, Jeff landed a job as a landscape architect in Saratoga Springs, NY and they relocated to Broadalbin, NY. They bought a small farm where Nicole quickly set to work planting all of her favorite fruit trees, bushes and of course…. her all-time favorite…. raspberries! Even during her fight with cancer, they made time for picking and preserving the overwhelming crops of raspberries her green thumb brought to life.


Nicole is survived by her husband, Jeffrey Goller, her parents Paul and Shirley Laurencelle, sisters, April Laurencelle and Hollie Hatch, and stepchildren, Cameron Goller and Brooklynn Trujillo and their respective partners, Gail and Josh. She also leaves her niece, Natasha Hatch, nephews Avery Laurencelle and El Phillip, and her grandnephew, and grandniece, Oliver and Azaria Laurencelle. Lastly, and she leaves behind her precious beagle fur babies, Ethel and Otis and several cats.


There will be a celebration of her life this summer in her home state of Vermont. There is also a memorial garden, in her honor, being planned at The Robert W. Chambers Mansion, located in Broadalbin. Nicky’s husband will design the garden in quilt patterns to honor her passion for sewing. We will always remember Nicky’s thirst for knowledge, whether learning or teaching, and her unconditional love that poured out naturally to her family and friends. In lieu of flowers, please make donations to Memorial Sloane Kettering Cancer Center where Nicole received the most comprehensive and heartfelt care. Think of Nicole whenever you see the crescent moon, she will be smiling down on all of us.

Services will be held at the convenience of the family. Arrangements for cremation are under the direction and care of Daniel J. Enea-Director of Mohawk Valley Funerals and Cremations, 7507 State Route 5, between Little Falls and St. Johnsville, 315-508-5131.
